Ingredients:

500g Beef Mince
2 Large Carrots
A Large Onion
2 Cloves of Garlic
2 Star Anise
50g Tomato Puree
A Large Glass of Red Wine
Olive Oil
500ml Beef Stock
100g Butter
Tsp Marmite
Tsp Worcestershire Sauce
150ml Milk
A Tin of Chopped Tomatoes
Tbsp Ketchup
500g of Spaghetti Pasta
2tsp Salt
Parmesan Cheese to Taste
4 Litres Water

Preparation:

Finely chop the onion and garlic; dice the carrot.

Cooking:

  1. First, pour the olive oil into a frying pan, along with the mince, and fry under a medium high heat until the mince is brown.
  2. Once brown, tip the mince into a bowl and leave to the side.
  3. Add more oil to the pan, as well as the onions, carrot and star anise. Turn up to medium heat and leave to cook for around 10 minutes; don’t let the onions go brown.
  4. Throw in the garlic, and cook for 2 minutes.
  5. Now, add the tomato puree; leave to cook until it’s brick red (about 10 minutes).
  6. Next, pour in the wine and cook until it has reduced by half.
  7. Remove the star anise, add the mince, stock, tinned tomatoes, butter, marmite, Worcestershire sauce, ketchup and milk. Bring to a simmer and cook for 90 minutes until reduced down.
  8. Boil the water and salt in a large pan. Add the pasta and cook for 11 minutes.
  9. Drain the pasta.
  10. Serve your spaghetti bolognese with parmesan to taste.
